Green Curry

I wish I could take full credit for creating the delish meal pictured above; however, the mad props go to my dear friend & Relentless athlete, Michelle.


Ingredients: Boneless skinless chicken thighs sautéed in coconut oil - add green curry paste, sirrachi hot sauce, ginger to taste and fresh or frozen broccoli - then add coconut milk and unsweetened coconut yogurt plus a little arrowroot powder for thickening.

Voila - a Paleo green curry! Yum!
