I was craving my homemade guacamole this past weekend and wanted to try something new with the dip besides corn tortilla chips. I had a sweet potato in the pantry and baked it up with 1 tsp of coconut oil and paired it with my homemade guacamole. Voila. Yumo! It was the perfect combination of sweet, salty, spicy. After Sectionals on Sunday, I will enjoy a skinny rita with the combo. =)
